Serves 4

INGREDIENTS
  • Wholewheat soba noodles: 200g

  • Tenderstem broccoli: 5

  • Sugar snap peas: 50g

  • Carrots: 2

  • Blackberries

  • Blueberries

  • Mint: 1/2 bunch

  • Coriander: 1/2 bunch

  • Spring onions

  • Lime: 1

  • Peanuts

  • Sesame seeds

Dressing

  • Peanut butter: 40g

  • Rice vinegar: 3 tbsp

  • Soy sauce: 2 tbsp

  • Honey: 2 tbsp

  • Lime juice: 2 tbsp

  • Grated ginger: 1 tbsp

  • Sesame oil: 1 tsp

  • Smoked Chili Sauce: 1 tbsp

METHOD
  1. Preheat the oven to 200 °C.

  2. Bring a large pot of salted water to boil. Cook the wholewheat soba noodles according to packet instructions. Drain and rinse with cold water. Transfer to a large bowl.

  3. Place the peanuts on a baking tray and roast in the oven for 5 minutes.

  4. In a small bowl, whisk together all the dressing ingredients and set aside.

  5. Chop the coriander and mint leaves and add to the noodles. Add half of the spicy peanut sauce and toss to combine.

  6. Slice the carrots into thin sticks. Remove any stalks and leaves from the tender stem broccoli and slice the sugar snap peas lengthwise. Add to the noodles with some chopped spring onions. Toss everything together.

  7. Add some blackberries and blueberries to the salad.

  8. Top with the roasted peanuts and sesame seeds. Drizzle the remaining dressing over the salad and serve.
